Cranberry Orange Muffins

Ingredients
  

  • 2 Cups all purpose flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1 beaten egg
  • 1 tsp. grated orange peel
  • 2/3 cup of orange juice
  • 1/2 cup of oil
  • 1 cup of coarsely chopped cranberries 1 bag of dried cranberries
  • 1/2 cup of chopped nuts optional
  • 1 tbsp of sugar to sprinkle on top before baking

Instructions
 

  • Mix flour, salt, sugar and baking powder. In separate bowl beat egg, orange peel, orange juice and oil. Stir into flour mixture until moistened. Fold in cranberries and nut. Put into large muffin tins and sprinkle with sugar if desired. Cool for 5 minutes then remove from pan. Makes 6 large muffins.

Cranberry Orange Muffins

Muffins are a quick and easy breakfast on days that you are on the go. These Cranberry Orange muffins are delicious with a touch of sugar sprinkled on top. They always remind me of Fall but you could make them anytime.

They are beautiful in a glass pedestal and complimented by vanilla yogurt for breakfast. Also a tip I found is to use fresh squeezed orange juice if possible. Makes them even better!
